- Pound the chicken breasts just a bit.
- Dip in egg, then flour.
- Fry on medium heat in butter.
- When crisp on both sides, remove from pan and place on warm serving platter.
- Add more butter (about one stick) and fresh mushrooms to pan and fry on medium for a few minutes.
- Stir in 3 TB lemon juice and pour the mushroom mixture over the chicken.
