This was absolutely wonderful! I made this exactly as directed except for two things: I sliced the chicken breasts in half and lightly pounded them, and I coarsely chopped the capers (from experience, so that they don't roll off the chicken). Chicken piccata is one of my favorite dishes, and this recipe is a winner. You've done it AGAIN, Mean - yet another stellar recipe!

This is the best and the easiest Chicken Piccata recipe I came across, and I tried quite a few of them. This recipe is quick for a weekday meal, and fancy enough for company. Ballottine

Made this recipe for dinner last night. I thought it turned out good, the chicken was cooked perfect. The sauce was ok, I didn't add all the capers or lemon juice and it was still a little sour. My husband said that it tasted to much like mustard, he didn't really like the sauce so I'm not sure if I will be making it again. Thanks for posting!

This is really good! I've never made chicken piccata before, and I feel that I chose a REALLY good recipe in this one. I even made it after going to my Zumba class, and it came together really quick. Here's what I did: I used 1/2 cup white wine, 1/4 cup lemon juice, and 1 cup chicken broth. I also only used 4 tsp. dried parsley flakes, because that's what I had. I used only 1 Tablespoon of butter at the end and followed the directions exactly, other than using just one skillet to brown the chicken (I had to do it in 2 batches). I roughly chopped the capers, but I don't think it really mattered, so I don't know if I'm going to do that again. I like the idea of making the roux to pour into the sauce beforehand - that's cool. I served this with broccoli and mostaccioli pasta (similar to penne) with it. I'm definitely going to make this one again or for my mom or dad if they come over. Thanks so much!

Loved this one--perfect for company! Be sure to have everything measured and ready for when the chicken is done, since the sauce comes together quickly. I used panko bread crumbs and the results were just beautiful. Thanks so much, Kirstin!

Fantastic recipe! I doubled the butter and flour, used 1/4 cup lemon juice and a can of broth. Didn't add the capers as my family doesn't like them. Came out perfect!

I love chicken piccata and this was an excellent recipe. It reminded me of my family recipe, with a slightly thicker sauce. To thin the sauce I added the same amount of liquids and butter to the second pan and used that as a thinner. This gave a sauce more consistent with what I am used to. Next time I will probably reduce the lemon to 2 T.; the lemon was just a bit overwhelming. Overall, I really liked this sauce and will make it again!
