Chicken Parmesan - Low Fat

ingredients
- 4 boneless skinless chicken breasts
- 29.58 ml low-fat Italian salad dressing
- 118.29 ml breadcrumbs
- 4.92 ml italian seasoning mix
- 236.59 ml thick spaghetti sauce or 236.59 ml tomato sauce
- 59.14 ml grated parmesan cheese
- 118.29 ml grated low fat mozzarella
directions
- Remove any clinging fat from the chicken and discard; wash and pat dry.
- Lay chicken between sheets of waxed paper- I save cereal box liners for this purpose; gently pound with the fleshy part of your fist (or a meat mallet) to flatten slightly.
- Rub all over with Italian dressing& let it sit while measuring out the remaining ingredients.
- Combine bread crumbs and seasonings on a piece of wax paper.
- Spray a large non-stick frying pan with cooking spray and place over medium heat.
- When hot, dredge dressing coated breasts through the bread crumb mixture and sauté until golden, about 5- 8 minutes per side.
- Spoon some spaghetti sauce on top of each breast, sprinkle with Parmesan& top with mozzarella; cover pan and continue to cook over medium heat until sauce is hot and cheese melts, about 3-5 minutes.

I've been looking for tasty, low fat recipes to make since being on my diet when I stumbled on this one. This not only was a hit with me but my family thought it was out of this world! I did decrease the bread crumbs to 1/4 c and replaced with 1/4 c parmesan cheese (less wheat). Served with pasta (for the family - not me) green beans and salad. This definately is a keeper! Thanks Country Lady.

Super, super! Used cracker crumbs instead of bread, all parm instead of part mozzy, an egg white with the dressing, and olive oil to fry. Also broiled for the last couple of minutes to give it a cheese "crust" on top. Wonderful with my homemade pizzaria sauce and served with feta-olive mashed potatoes. Lovely!

This was a very quick and tasty recipe! I used Italian Bread Crumbs instead of the plain crumbs and the Italian seasoning mix, and served it with vermicelli with the rest of the spaghetti sauce from my Prego jar. I also made Brussels Sprouts in Garlic Butter (#21761) to eat with it. Thanks for a great recipe!

On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges!
We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006.
