Keto-Friendly Chicken Parmesan

"This is a simple, frugal way to make a great meal that looks like you spent a lot of time on it!! I serve this with a side of pasta but feel free to omit that. Check it out! I always end up adding more sauce, but not everyone is a sauce freak like my family is!"

  • Brush thawed chicken breasts with olive oil. *Note: use tenderloins or half the chicken breast if they are too large.
  • Combine all seasonings, and sprinkle chicken breasts on both sides.
  • Brown chicken breasts over the stove, turning once. Cook approximately 10 minutes on med-hi heat on each side. For thinner breasts, reduce time by 5 minutes.
  • Add spaghetti sauce to the pan, covering the chicken.
  • Let sauce simmer on med-low heat for 15-20 minutes or until chicken is thoroughly cooked, if not already.
  • Top chicken pieces with mozzarella cheese and cover. Cook for 5-8 minutes more until cheese is melted.
  • Serve with pasta or caesar salad!

  2. Very good and easy to make. I followed the recipe as written other then I doubled the recipe. We all enjoyed this and there wasn't any left.
     
  3. Very easy and I also like the "no breading", but Chicken Parmesan should have some parmesan :) I added some after dishing it up. The seasonings were perfect, though. Made for Fall 2009 PAC.
     
  4. This was absolutely fabulous!!! Kudos on not having breadcrumbs in the recipe- This just didn't need them. Seasonings were very nice too, very flavorful. Very easy to make as well, and we served this with Recipe #303124. Thanks for sharing! ~Sue
     
  5. Wow! We all loved it. So much easier than pounding, dipping, breading the chicken and the flavor was great. I made one tiny change...instead of using shredded mozzarella I bought a fresh mozzarella ball which I sliced and layered on the chicken.Served it with recipe#106044. Thanks!

I live in Topeka, KS. I LOVE TO COOK! However, I get alot of my ideas from family recipe books, and my favorite HAMBURGER cookbook. It's my lifesaver most the time. I do a lot of Rachael Ray recipes, and I do a lot of recipes that don't have a lot of ingredients in them and don't have a long complicated process to do. I love to spend time with family and do outdoor things. Except when it gets cold or icy. Then I hibernate in my house and just cook! I don't know if I have any hobbies yet, but I enjoy decorating and party/planning. I like taking pictures too. Well, that's about all I can think of.</p>
