Classic Chicken Pad Thai

"This recipe is a combination of several recipes that I like - I was trying to copy a meal that is served at a restaurant here in Phoenix called Pei Wei - I think I did it! This is fabulous! Great flavor. Instead of rice noodles we used the whole wheat fettuccini noodles from Trader Joe's. An optional ingredient would be to add 1 to 2 teaspoons of curry powder also. That should be added when cooking the onion and chicken in the first step. Enjoy! For those of you have made this before I have tweeked this just a bit. I've added the vinegar in the sauce. Went back to Pei Wei and discovered it was missing vinegar! Reduced the oil and the amount of chicken as well."

  1. Too much vinegar, soy sauce, and lime for my taste. I remade the sauce after making it as directed, but this time added only a splash of vinegar, soy sauce, and lime and was really pleased with the flavor. I will definitely make this again!

  2. I made it as directed and added bean sprouts as suggested. It definitely needs the curry and I would add more chilis. It was okay but I wouldn't make it again.

  3. This is the best Pad Thai sauce recipe! Even beats most restaurants in my opinion! Love it with chicken, bok choy, bean sprouts, onion, and sugar snap peas...yum! Thanks for posting!!!

  4. Made this last night and loved it! I added the curry to the chicken and am glad that I did because it was delicious! Also, I didn't have creamy pb so I used my all natural crunchy and skipped adding peanuts at the end. Also used lots of cilantro, my fav! Thanks so much for the amazing recipe!!

  5. Very good and very easy! We doubled the crushed red pepper and it was hot, but that is exactly how we like it. I left out the onion b/c I am not a fan. We didn't have any peas either, but I will add them next time. I added the suggested curry as well. It filled the house with the scent of so many complex spices. Thanks!

I have always loved to cook. I really love to try new recipes! RecipeZaar is perfect for looking for new recipes. It's the first place I go when looking for something new! My husband and I moved to Northeast Arizona (up in the mountains) in April (2007). We live near Show Low. The summer was absolutely beautiful! It never got to 100 degrees! Coming from Phoenix, we both enjoy being away from the heat and the city. Our first snow this year was absolutely gorgeous! My recipe ratings pretty much follow the star system. I will usually make a recipe as is the first time. I say usually but I do still change things sometimes. I try to be fair if I have made changes. I will rate 5 stars if we LOVE it and it will be a regular dish around our house. 4 stars if we really liked it and 3 stars if it was just OK but we wouldn't make it again. I realize everyone's tastes are different so I do try to be gentle. Cooking can be a very personal thing to someone. Another creative outlet for me is beading. I love to make beaded jewelry.
