Chicken over Pasta

ingredients
- 3 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced (more or less to taste)
- 3 teaspoons dried parsley
- 1 (8 ounce) can tomato sauce
- 1⁄3 cup white wine
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon ground cayenne pepper
- 1 teaspoon dried basil
- 1⁄4 teaspoon black pepper
- 1⁄4 cup chicken broth
- 8 ounces angel hair pasta
directions
- In 12" skillet over medium heat, add olive oil.
- Add onion and garlic and cook until tender, stirring occasionally.
- With a slotted spoon, remove onion and garlic to a small bowl.
- In remaining drippings in skillet over medium high heat cook chicken pieces until slightly browned.
- Add parsley, onion, tomato sauce, wine, salt, ground cayenne red pepper, basil, pepper and chicken broth.
- Bring to a boil, reduce heat to low, cover and simmer 10 minutes.
- Serve over angel hair pasta.

Excellent dish! I didn't have the wine, so followed advice of other reviewers and replaced it with chicken broth. My husband has dreaded spaghetti night since I've known him - he never likes my spaghetti. He declared this to be the best sauce he's ever eaten. Way to go and thanks for sharing! I did double the sauce as suggested by others - forgot to double the onion and garlic, though, so will do that next time.

This was really really good! I didnt have any white wine only red, (boo), so i just added some more chicken broth and it was wonderful.. I also added some oregeno, I just think that adds a more itlian flavor to the dish..really easy and simpe and will definatly be adding this into the rotation! Thanks

This was a fast easy dinner. I cut the red pepper down to just a pinch and it was plenty hot for my kids! I had wine so I used it but if I don't have a bottle open I'll just increase the chicken broth in the future. It was plenty for me and the kids but it wouldn't not be enough I hubby was here even with small servings. Overall...good taste...will double if serving 4 people.

I thought overall this was a tasty dish. Since I don't keep wine around rather than buying a bottle and only using 1/3 of a cup I replaced the wine with Chicken broth. I loved the fact that this incorporated chicken in it. I noticed in the making of this, as the sauce cooked and thickened, it didn't leave for much sauce, which I am personally a fan of. I added an additional can of chicken broth to combat this. Rather then 4 servings, this was more like 2 to 3 servings. Next time around I will use the same amount of chicken since I used large chicken breast and double the remaining ingredients. Thank you for sharing this tasty recipe!!

I thought overall this was a tasty dish. Since I don't keep wine around rather than buying a bottle and only using 1/3 of a cup I replaced the wine with Chicken broth. I loved the fact that this incorporated chicken in it. I noticed in the making of this, as the sauce cooked and thickened, it didn't leave for much sauce, which I am personally a fan of. I added an additional can of chicken broth to combat this. Rather then 4 servings, this was more like 2 to 3 servings. I am a stay at home mom of two wonderful little boys, Alex and Andrew. Cooking and Baking are my two favorite hobbies, and it's a good thing because I do it a lot!! My husband can be somewhat picky so when I find a recipe that he likes, it immediately goes into my "keeper" file. I'm a big believer in cooking healthy meals that are both good for you AND delicious. Don't get me wrong, I do love a good dessert, as you can see by my chocolate marshmallow brownie recipe!!! But everyone deserves to splurge every now and then. It's just all about moderation.
I also enjoy staying fit by doing aerobics and yoga. I enjoy reading, hanging out with my family, boating and riding my bicycle.
