quick, easy and tastes great! only thing I did a little different was to toss the thighs with the dry soup. 2008 xmas swap

This was a nice easy recipe to make - I would make it again! I used bone in chicken pieces and added some potatoes to the pan while baking. Thanks for the recipe!

Loved it. Have to confess I rarely prepare meals using soup mixes (canned or dried) but tonight was one of those enenings when we were too tired to cook but hungry enough to want a real meal. This was the perfect compromise dish. I could not find canned apricots and used peaches instead. Made a mistake in covering the casserole dish so there was not much evaporation - don't do that as you lose the wonderful gravy this creates.I instead had to scoop a bit of the sauce out and quickly reduce and thicken it with a bit of arrowroot. The sweet savory combination was so goodand the wine added a bit of sophistication and complexity. Served with brown rice baked at the same time and some quick steamed green beans. Delicious. This is soooo good and easy! I had to use Mrs. Dash seasoning, salt substitute and pepper and lots of minced dry onions in place of onion soup mix. Hubby can't have. I also decided the broth would be excellent over cheesy baked mashed potatoes with diced green onion in it(it was!)and I made cornbread biscuits to serve. The broth was excellent with the biscuits also. This is truly a winner. To make for kids who can't have the wine, substitute creme soda.I am very glad you posted this because apricots and chicken are high on the list of what I can cook for him and then it was adaptable too. I put all in the oven except the biscuits.

This is so easy! My daughter actually made it tonight. That's a shocker! Big hit with everyone. Loved the onion soup with the apricots. We used 6 boneless chicken breasts so it only took 30 minutes! Great easy and delicious! Thanks!
