Easy to put together and makes a moist meatloaf, lovely with mashed potatoes and salad. Or use leftovers for sandwiches!

I was unsure about using ground chicken, but it is delicious, as good or better than turkey and beef. I used whole foods brand chicken stuffing (1/2 bag), a mix of onion and celery that I sauteed first in olive oil, and added a little ketchup to the meat mixture. Mixed BBQ sauce and ketchup for the topping. Will definitely make again! *I also omitted the parmesan.

  1. Mix all ingredients in a bowl.
  2. pour into large loaf pan.
  3. Bake in preheated oven 350°F for 1 hour.
  4. Let stand 15 minutes before slicing.
