I love new appetizer recipes especially ones my kids will eat happily. This recipe is from Rachael Ray's magazine June/July 2011 by Esther Choi.

  1. Mix chicken, cilantro, breadcrumbs, onion, garlic, salt and pepper.
  2. roll into 1-tbsp. balls.
  3. In medium skillet, heat oil over medium heat. Add meatballs and cook through, 6 to 8 minutes.
  4. Meanwhile, mix remaining ingredients (except peanuts) and warm in microwave.
  5. Toss meatballs with half of sauce and sprinkle with peanuts. Serve on toothpicks with remaining sauce for dipping.

Made these just for the 2 of us to enjoy for supper, & they're great, especially with the peanut sauce, which makes 'em even more unusual & enjoyable! They are definitely on my kitchen schedule to include on my finger food counter later this month when I host another of my monthly meetings! A keeper of a recipe, for sure!
