This recipe came from Zonya Foco's "Lickety Split Meals". It is a very quick, and relatively healthy.
- Cut the onion into wedges. Heat oil in a nonstick skillet over medium-high heat, and saute onion, garlic and mushrooms.
- Lightly salt and pepper the chicken and add it to the skillet, cook 5 minutes on each side.
- Mix the chicken broth and cornstarch together, and add to the skillet. Reduce heat to low and simmer until the chicken is done. About 5 minutes.
