Chicken
- 4 chicken breasts
- 50 g fresh ginger, minced
- 50 ml soy sauce
- 200 ml olive oil
- 8 dashes paprika
- 5 dashes cumin, powdered
- 1 lemon, juice of
- salt and pepper

For the veggies
- 800 g broccoli
- 800 g squash
- 500 g green beans
- 2 onions
- 50 g fresh ginger, minced
- 2 tablespoons olive oil
- minced fresh herb (mint, green onion, dill, etc.)
- salt and pepper
directions
- The night before -- make the chicken marinade: in a bowl, mix the ginger, soy sauce, olive oil, cumin, paprika, juice of 1 lemon, salt and pepper.
- In this mixture, dip the chicken breasts and let it marinate all night.
- The next day (when you are ready to use them), grill the chicken breasts or cook them in the oven with all the marinade.
- For the veggies: wash and drain all the veggies. Cut the broccoli in small pieces.
- Leave the green beans whole and cut the squash in "sticks" or julienne but a bit thicker.
- Cut the onions. Steam the broccoli and green beans for 5 minutes.
- Heat the olive oil in a wok, add the onion and let it cook for 4-5 minutos constantly moving it, then add the cooked (steamed) veggies, the herbs and ginger.
- Add salt and pepper to taste.
- Cut the chicken breasts and serve with the veggies.
