  • The night before -- make the chicken marinade: in a bowl, mix the ginger, soy sauce, olive oil, cumin, paprika, juice of 1 lemon, salt and pepper.
  • In this mixture, dip the chicken breasts and let it marinate all night.
  • The next day (when you are ready to use them), grill the chicken breasts or cook them in the oven with all the marinade.
  • For the veggies: wash and drain all the veggies. Cut the broccoli in small pieces.
  • Leave the green beans whole and cut the squash in "sticks" or julienne but a bit thicker.
  • Cut the onions. Steam the broccoli and green beans for 5 minutes.
  • Heat the olive oil in a wok, add the onion and let it cook for 4-5 minutos constantly moving it, then add the cooked (steamed) veggies, the herbs and ginger.
  • Add salt and pepper to taste.
  • Cut the chicken breasts and serve with the veggies.
