Chicken Marengo

"Basil lovers rejoice! The sauce in this recipe is gravy-like and the light coating on the chicken makes this light dish seem so rich. Said to be the meal that Napoleon at after defeating the Austrians in 1800, this recipe is named after the Italian town of Marengo where the skirmish took place. Napoleon liked it so much, he declared that the savory chicken breast should be served after every battle."

  • Sauté the onions and garlic in vegetable oil until translucent.
  • Mix flour, salt, and red pepper flakes, and coat the chicken.
  • Add the pieces of chicken to the pan with the oil and sauté until browned on all sides.
  • Add the tomatoes and chicken stock.
  • Simmer, covered, for 45 minutes.
  • Meanwhile, melt butter in a saucepan and sauté the mushrooms until tender.
  • Sprinkle the mushrooms with lemon juice.
  • Remove the chicken pieces from pot, drizzle with olive oil to taste, and place them in a serving dish to keep warm.
  • Add the mushrooms, basil, and chopped parsley to the tomato sauce, pour over the chicken, and toss well.

  2. Very good chicken dish for company or family. Only alteration I made was to use the chicken breasts without cutting them up. Loved the basil in it!

Hello. I, like many of us, once aspired to be a chef..but later realized I wanted to keep it as my passion, instead of making it "work". Currently I live in Houston with my homecookin guinea pig, Walker. I work in recruiting by day, and enjoy many hobbies outside of work such as gardening, cooking, volunteer work, golf and enjoying the houston nightlife. My advice as a cook is don't be scared to go outside of the "norm" every once in a while, you just might find something you've been missing! I always try to shop by a list, but I also always leave room for one new ingredient. Stuff you see all the time and wonder what it's for or what it tastes like, particularly different fruits and veggies and sauces and marinades. Usually if you buy it, you can "google up" a recipe later on. I'm a frugal shopper and love finding "more bang for your buck" kind of recipes; but we also try to eat meats and produce that is free of hormones and chemicals. I freeze a lot so that we dont waste food, since there's only two of us, and I also will recycle last nights food into tonights.
