Directions

  1. Heat a large nonstick skillet over medium high heat, and coat with cooking spray.
  2. Add chicken, salt and pepper to pan, cook for 3 minutes stirring to crumble.
  3. Stir in onion and the next 5 ingredients up to and including olives, cook for 3 minutes or until chicken is done.
  4. Stir in cheese, and lemon juice.
  5. Spoon 1/4 mixture into each lettuce leaf.
