Chicken , Leeks and Spinach

This is a VERY tasty and healthy dinner. I usually add fresh ground pepper and sea salt after it's cooked, but that is your call.


  1. clean and trim chicken.
  2. clean and slice leeks.
  3. rinse and drain spinach.
  4. place chicken on a sheet of foil (large enough to make a packet with the veggies).
  5. evenly divide and place leeks and spinach on top of chicken.
  6. wrap foil around chicken and veggies.
  7. bake at 375 for 35 minutes or until chicken is no longer pink.

Very good and easy! I made a few changes by using 1 onion, chopped instead of the leeks and only 5 oz of spinach -- was that an error in the ingredient list? Thought a bit of garlic may be a great addition to this recipe. Thanks for sharing!

My Husband loved this dish!! I thought it could use a little more flavor, so I will add some crushed garlic the next time I make it, but we will definately be eating this again.
