Cut this in half for the two of us and still had enough for lunch the next day. It was quite good, very tastey, but a little loose. The rice was cooked just fine, I guess there was just a little to much liquid. Luckly enough we had some wonderful cajun bread to sop up the juice. I don't think the taste was effected at all, it was good. Thanks for posting.

My husband is from Louisiana and we both made this. It was so good and it got his approval! I don't like seafood (go figure, he'd marry someone that doesn't eat seafood) and he said it would be great if there was shrimp in it. We will definetly make this again!

This was great!!! I'm not big on onions so I only used 1 small one and added some yellow and red bell peppers to the mix to fill the void. I also used brown rice instead of white. I will definitely be making this again...

This was really easy and quick, as well as tasty. I had most of the ingredients on hand, and managed to substitute others. I had some frozen turkey sausage patties, which I cut up and worked well. I didn't have enough plain rice on hand, so I used a box uf Uncle Ben's long grain and wild rice, put in the whole 32 oz. of chicken broth and added a little brown and white instant rice. I almost always add an extra Knorrs boullion cube to chicken broth for extra flavor. Found some medium spicy salsa in the frig and put about 3 T. of that too! I'm a little wimpy when it comes to spicey, so this was perfect and my family just adds a little tabasco if they need it. They didn't.

Oh yeah, this is a keeper. The whole family loved it. i used 1/4 tsp. cayenne and it was enough for a little kick without being overwhelming. As others suggested, I upped the garlic, and added thyme, basil and a bay leaf. Great to have another easy and tasty chicken recipe.

I added more garlic, thyme, and basil. I combined this recipe with another, but it was primarily this one. It was a great Fat Tuesday meal, especially when my boyfriend had never had it before.

We really enjoyed this recipe. Very filling and tasty! I used 1/2 tsp Cayenne, and I think I will only use 1/4 tsp next time. My husband liked it that way, but a little too spicy for me! Thanks for sharing!

This was my first time ever making this dish. It was just as how I expected it to be. Delicious,comforting and very hearty. I left out the cayenne cause my stomach can't handle it;added a red pepper and subbed a kielbasa sausage.Thanks Sharlene,can't wait to try some of your other recipes.

I made this tonight for my family and they loved it! My husband wants it again next week! I made a few substitutions: roasted turkey for the chicken breast, hot italian turkey sausage for the smoked turkey sausage and stewed tomatoes for the chopped tomatoes. It all came out wonderful and delicious! Thanks for sharing!

Delicious! The only changes I had to make was to sub leftover andouillie sausage for the smoked turkey sausage (because that's all I had on hand), and I cut out the green peppers and cut the onion down to one, but only because the kids won't eat them without a fight. But the spice blend in this was marvelous! Just the right amount of heat for us. I plan to make this over and over (next time using the right amount of sausage!), and wouldn't change a thing! Thanks for sharing this recipe! It's a definite keeper in my house...:)

Nice! This had a good amount of heat. It was easy to put together, perfect for a busy worknight. I used precooked chicken andouille from Costco instead of the smoked turkey sausage. Also I added the broth in stages, since the pot was sort of full. I will definitely make this again, especially when I can't get to my favorite Cajun spot!
