  • Preheat oven to 400°F Spray muffin pan cavities with vegetable pan spray.
  • Press wonton wrappers into cavities.
  • In small skillet, cook red pepper and green onion in oil until soft, about 5 minutes.
  • Meanwhile, combine chicken, mayonnaise, cheese and seasonings.
  • Stir in cooked vegetables.
  • Spoon 3 tablespoons filling into wonton "cup."
  • Bake 7-8 minutes.
  • Serve hot or at room temperature.

  1. These were one of the BEST quick appetizers that I have ever made. Since we can't eat red peppers, that is the only thing that I took out of the recipe. I was going to add frozen corn, but forgot to throw some in the microwave and cook it first to get the excess water out of it. The only thing that I had to change in the directions was the part about putting 3 T. of filling into each wonton wrapper "cup." If I had done that, filling would have been up to the top of each muffin cup and above the edges of the wonton wrapper "cups" and the filling would have spilled over during baking and possibly have made them difficult to get out of the muffin cups. So, I put about half the amount and they were fine. DO NOT hesitate to make these! With our daughter away at college, it was a quick and simple early Sunday night dinner for the two of us. I only made 12 of them and had filling mixture left that I used to make my husband a "chicken salad" sandwich for work the next day!!!!!

I am a stay at home (or in the car:)) mom to two cute kids-ages 7 & 4-and one husband! He's pretty cute too....We live in Fullerton,California, which is also where I grew up.
