Blend of chicken breast with hints of cilantro, onion, and tomato. This is one of my own that I like on a rainy day.
- 8 ounces chicken breasts
- 6 cups chicken stock
- 1⁄4 cup chopped cilantro
- 1⁄4 onion, diced
- 1⁄2 cup diced potato
- 1 cup mixed vegetables
- 1⁄2 cup small shell pasta
- 1 pinch salt and pepper
- 1 pinch basil
- 1⁄2 cup tomato sauce
- Heat chicken stock and add cubed chicken breast.
- Add all your remaining ingredients.
- Boil for 20 minutes until shells have cooked.

Although I prepared this differently I was happy with the soup. I did leave out the potatoes and added more shell pasta. I also added garlic and more basil. Thank you for sharing your recipe!
