This was just WONDERFUL! It worked so well & I wanted to try it whilst the November 2006 topic of "Getting in to the Spirit of things" was still running!! I had my camera at the ready to take some GREAT photos, but my battery was dead & I had no more batteries.....however,it's gone into my Cheeky Chicken cookbook, so I'll submit a photo next time I make it! Thanks Nan for a great recipe with WINE!!

This is a really nice meal to make! I also doubled the sauce. For lunch the next day I used the left overs, along with some rice and made a wrap sandwich, And along with the left over salad. Totally enjoyed this!!

Adding to the applause ... great taste, easy & quick to make. I used only 2 chicken breasts but made the full complement of sauce & veggies. Bread dunking good! Thanks!

This dish was outstanding. I used legs and theighs. I also used baby bella mushrooms. I carmelized my onions only because I like my onions that way and used tomatoes frozen from my garden. I removed the skin before chopping them. I wish I could rate this 10 stars. Thanks PanNan for sharing such a delicious recipe.

Fantastic! I doubled the liquids so that I would have extra pan juices- dipped some crusty bread in them- to die for! Also 2x the garlic! OMG was this good! I used bone-in chicken breasts- cooked 'skin' side down to keep moist but removed the skin and visible fat before baking. Turned over and basted when foil was removed. I was really worried about the balsamic being overpowering as it was very strong smelling at the start- but it turned into a mellow undertone - kind of like 'hmmm what is that yummy flavor?' rather than 'OK there is vinegar in here'... I agree with the above review to drain before serving- Next time I am going to drain and reduce the liquid but will not thicken - and serve as an 'au jus' with maybe a new pinch of thyme stirred in during reduction just to freshen the flavor of the thyme and bring it to the front a little more. FANTASTIC recipe PanNan!

Very nice chicken dish! I left out the mushrooms (personal pref) and doubled the garlic and got a really nice sauce out of it! I particularly enjoyed the thyme flavour; next time I'll probably drain the sauce off the chicken and thicken it just before serving. Great quick weeknight dinner!

This is my kind of recipe. Can be cooked in over and so easy. Great change of pace from the usual chicken dishs we have. The balsamic vinegar gives it a special touch. Thanks!!!
