Chicken in Lemon & Garlic

  • Slice the chicken breasts widthwise into very thin slices.
  • Heat the olive oil in large skillet.
  • Add the onion and cook until softened but not browned.
  • Add the garlic and cook for an additional 30 seconds.
  • Add the sliced chicken to the skillet and cook gently for 5 - 10 minutes until all are lightly browned and the chicken is tender.
  • Add grated lemon rind and the juice of 1 lemon and let it bubble.
  • Remove the skillet from the heat, stir in the parsley and season to taste with salt and pepper.
  • Transfer the chicken to a warm platter. Sprinkle some more lemon rind and serve with lemon wedges for squeezing over the chicken.
  • Serve with crusty bread for mopping up the lemon and garlic juices.
