My husband's response to this soup was "Well you outdid yourself this time Martha!" I used half a cup of leftover cooked rice (which I added near the end of the cooking time), a cup of frozen corn and a clove of fresh garlic. Thanx Laura Lee!

We really enjoyed the recipe at work. We did modify it slightly. We prepared it in a 12 quart roaster ovens so we needed to multiply it by 4. We double the chicken and added 1 pound each of frozen shrimp and andouille sausage. Everyone at work loved it. Easy to prepare.
