- wash chicken.
- rub chicken with salt.
- stuff chicken with ginger, garlic and spring onion.
- put in boiling water.
- let water boil for 10 minutes.
- cover and simmer for 40 mins over low heat.
- remove chicken and soak in ice cold water for 5 minutes.
- remove chicken from ice water and remove stuffing.
- rub chicken with sesame oil.
- let it cool then chop into pieces.
