This is a marvelous dish that I throw together whenever I am in a hurry. It is so quick and easy. I adapted this recipe from a recipe I found a while back. The recipe was really lacking, so I added some key ingredients to bring the recipe to life :-) I hope you like it!

  1. Take out a large pot and cook pasta according to directions.
  2. Meanwhile, In a wok or a skillet, heat oil and saute chicken with capsicum, onions and raisins for 3-5 minutes, until chicken is done.
  3. Add ginger, garlic, and pine nuts and cayenne and toss.
  4. Add soy sauce and lime juice, and remove from heat.
  5. Drain your pasta; do not rinse it!
  6. Put pasta in a large bowl and pour chicken mixture over pasta and lightly toss.
  7. Add salt and pepper to taste and serve immediately!
  8. Add more soy sauce and more cayenne to your tastes (I use a lot more cayenne!).
  9. ENJOY!

This was absolutely excellent!!!! A few modifications I made were a) dried cranberries instead of raisins, b) mixture of nuts, including pistachio, pine nuts, sunflower seeds, peanuts & chopped almonds, & c) Emeril Lagasse's Essence ~ Emeril Lagasse's Essence instead of cayenne & more than just a dash. We will definitely be adding this to our meal rotation!!!!!

My husband and I thoroughly enjoyed this meal. I used a different pasta (I forget what it is called, but it looks sort of like penne pasta) and i omitted the rasins and pine nuts because I didn't have any on hand. I definately put in more than 1 dash of cayenne and hubby loved it but it was a tiny bit too hot for me. I might limit it to 3 dashes next time, but we will definately make this one again. I especially liked it because all of the ingredients are things I normally have on hand. Thanks for posting this.
