- 30 saltine crackers
- 29.58 ml all-purpose flour
- 29.58 ml dry potato flakes
- 4.92 ml seasoning salt
- 2.46 ml ground black pepper
- 1 egg
- 59.14 ml vegetable oil
- 6 (680.38-850.48 g) boneless skinless chicken breast halves
directions
- Place crackers in a large re-sealable plastic bag; seal bag and crush crackers until they are coarse crumbs.
- Add flour, potato flakes, seasoned salt, and pepper to bag and mix well.
- Beat egg in a shallow dish or bowl; heat oil in a large skillet over medium high heat.
- One by one, dredge chicken pieces in egg beat, then place in bag with crumb mixture, seal bag and shake to coat.
- Reduce heat to medium and cook coated chicken in skillet for 15 to 20 minutes, turning frequently, until golden brown and juices run clear.

This was excellent! I am not a chicken fried chicken fan normally and my husband is. He printed this off and I gave it a try. Very good. I served it with the package country gravy and mashed potatoes and corn. I only made 2 chicken breasts and used olive oil, but used less than 1/4 cup of the oil. This has been added to my dinner recipe collection. Excellent recipe!!
