Easy to make chicken when you want something good but fast. I have found that if you prefer not to use tomatoes you can use salsa.
- 1⁄2 cup flour
- 8 boneless skinless chicken breasts
- 3 tablespoons olive oil
- 2 (10 ounce) cans tomatoes and green chilies
- 1 (2 ounce) can black olives
- Coat chicken with flour. Heat oil in large skillet. Add chicken and cook until brown.
- Add tomatoes with chilies and the olives.
- Simmer for 20 minutes or until chicken is cooked.
