A fresh blend of flavors that's easy to modify to compliment your favorite flavors.
- 1 lb gemelli pasta or 1 lb other firm pasta
- 4 tablespoons olive oil
- 4 tablespoons balsamic vinegar
- 4 ounces feta cheese
- 1⁄4 cup yellow pepper, in rings
- 2 cups cooked chicken, and cubed
- 1⁄4 cup red onion
- 1⁄2 cup cherry tomatoes
- 1⁄2 cup fresh basil, loosely packed
- 3 tablespoons pine nuts, toasted
- 1⁄4 cup cooked bacon, diced
- Cook Pasta according to package directions.
- Dice and chop ingredients to the size you prefer.
- Mix all together in a large bowl and refrigerate at least 1/2 hour.
