  • Combine the lime juice, 2 Tbs olive oil, oregano, crushed garlic, pepper and salt in a large zip lock bag. Mix and add chicken breast to the bag. Marinate from 2 - 6 hours.
  • Prepare grill or BBQ and grill breasts until they are cooked through but still moist. About 2 to 3 minutes on each side. Slice them diagonally into strips.
  • Heat remaining 2 Tbs olive oil in large skillet and saute onions and peppers. Add sliced chicken and toss gently together. Serve on warmed flour tortillas with salsa and guacamole (if desired).

I love to cook and also have a garden every summer. I like to can and make pickles. I work part-time in an architects office that specializes in medical facilities. It is interesting and the people are really nice. I have 1 dog (black and white cocker spaniel) and 3 cats. I like to go camping and spend time at the beach. I try to walk 5-6 days a week and am trying to lose a goodly amount of weight - which is kind of hard when you love to cook. But, it is also a challenge to make great tasting food that will also be healthy and help me work towards my goal weight.
