Chicken Escondido

Ingredients:

Serves: 4

Yield: 4.0 dishes

• 1 lb chicken breast, boneless & skinless
• 1/3 cup sun-dried tomato
• 2 garlic cloves
• 2 tablespoons olive oil
• 2 tablespoons balsamic vinegar
• 1 (15 ounce) can black beans, drained, rinsed
• 1 (16 ounce) jar salsa verde
• 2 cups brown rice, cooked

Directions:

1. Cut chicken into bite-sized pieces.
2. Saute tomatoes and garlic in olive oil and vinegar until tender.
3. Add chicken and cook until done.
4. Add salsa and black beans.
5. Simmer 5 minutes.
6. Serve over brown rice.

Very tasty! Loved the spicy kick. For those of you that don't like brown rice, try putting this on a bed of yellow rice. I purchased the Goya brand in the box, and the taste was WONDERFUL!
