I love your sauce recipe. I have my own chicken enchilada recipe and I was looking to improve it. You made that happen. Thanks for sharing.

I've always made beef enchiladas with red sauce. And yes my son too wanted me to make the white sauce enchiladas. My family and I loved this recipe, it was very delicious. My only regret is that I wish I could make it sooner. This will definitely stay in my cookbook. Thank you vivmom

This was delicious! I used turkey instead of chicken, but don't feel that that altered the turn out. I would salt and pepper the sauce and the filling, along with garlic either added to the sauce or the filling. I put cheese inside and outside. Next time and there will be a next time :) I will add cilantro to the filling along with some sliced olives. I'm thinking you could sub the green chilies with a green salsa in a pinch. This was a wonderful dinner for a Saturday night. Thank you vivmom for posting this delightful recipe. Shirl

This is a great recipe, I made 2 batches one with cheese and one with the cheese, because I do not like cheese. The one that had the cheese I took to work and everyone just loved them. Thank you once again for this great recipe. I usually do not eat enchiladas because of the cheese, but this one I will make all the time.

I was looking for a recipe similar to what a relative used to make for us growing up and this was pretty much perfect! My husband, an extremely picky food snob, loved it. I used leftover grilled chicken that had been seasoned with salt, pepper, and garlic powder, and I used a bit more red pepper - about 1/4 tsp - since we like things spicier. Great recipe!

Thank you very much for this recipe. It made a delicious dinner for us that was quick and easy to make. The ingredients were all easy to find, too. Will definitely have it again.
