Made this for my family but changed it slightly. I followed the recipe but Instead of a 4oz. can of green chiles, I diced up a jalapeno pepper and I spread refried beans on the flour tortillas and then added the chicken mixture as within the recipe and then instead of cheddar cheese, I used shredded Chihuahua Cheese (authentic mexican cheese) so the recipe is the same for measurements and these minor changes so this was DELICIOUS!! Will definitely make again!!
Made this for my husband, kids and some friends and they loved it. I added a bit more sour cream to it and after it was done cooking topped it with Fresh Salsa.It was a hit.

This is so much easier than how I usually make my enchiladas. A nice change and quick to whip up if you already have diced chicken. I did add an extra tsp. of chili powder to the sauce which gave it a nice flavor. Thanks MizzNezz for a keeper!
I loved these enchiladas. The recipe sounded a little bland as-is so I made two little modifications. I added 1/2 tsp. of garlic powder and some hot sauce to the filling. These were a huge hit with my DH. They only made 3 servings for us...they were that good!
YUM!! I cooked some frozen chicken breast in the crock pot for about 4-5hrs on low with some fresh squeezed lime juice. I shredded the chicken and followed the recipe exactly. I used light sour cream and fat free cream of chicken and also added a little shredded cheese to the mixture. Came out really good!!! Thanks for the recipe!
hm, ok, so i liked them... buuut wasn't blown away by them the way other reviewers were. I found them rather bland and the soupy mixture wasn't enough to make it "saucy", but if it were I still I wasn't a major fan of the cream of chicken soup flavor.... Well, to each your own eh?! Thanks :)
Yabba, dabba, dooo.....these were incredible! With the Fall arriving, my body has gone into a full cook mode. I had made my meal plan up ahead of time, and these chicken enchiladas were on the menu. Mis Nezz, these were so easy, so delicious, and so memorable. My husband could not stop raving about this dish. I didn't have green chilies, but no one complained. Next time, we're going to try some refried beans to make the meat go further. These were very economical to make, too. I bought all the ingredients at Aldi's and I figured that the whole pan was about $4.60. Whooo-Hoooo, not that's my kinda of price. Thanks for a real KEEPER!
Good stuff! I made a double batch of this tonight. Ate them for dinner, and am freezing (and vacuum sealing) the rest for OAMC reserves. I followed the recipe as closely as I could, except I didn't have the green chilies. Thanks for the keeper.
My first review ever! I am not very talented in the kitchen to say the least and I'm just starting to cook and I found this site. These enchiladas were easy to make and tasted GREAT!! I didn't the onion since I don't like the texture of them, but I used onion powder and it worked out great. Next time I'll try corn tortillas since they were a bit tough on the bottom (they might have not been as fresh as they should have been). Thank you!!
