      Delicious! The family loved it. I used a small can of green chiles instead of green pepper -- also added more chicken. Very easy and tasty.

      Very good. I increased the chicken, using about 2 cups leftover roasted chicken, and served with cheese quesadillas, as you suggested. It made for a tasty, quick and easy meal. Thanks for posting!

      Fantastic!!! This is one of those dishes you wish you could give more than 5 stars to!!! I made this to go along with CountryLady's "Southwestern Stuffed Bell Peppers" for dinner tonight. I'm so glad I did! However, this is more like a main dish meal...especially since I used 2 cups of shredded rotisserie chicken! To my dismay, I was out of enchilada sauce (I usually have several cans on hand). So, I used Kittencal's "Kittencal's Red Enchilada or Taco Sauce". I did omit the corn...for DH's sake. And I added some sliced green onions at the end, I think next time I'll add in some diced avocados at the very end. Thanks for such a delish soup, KLBoyle! Will be making this again and again! Yum!

      This soup is great! It reminds me of the tortilla soup at some of my favorite Mexican restraunts. I made some crispy tortilla strips (Just spray with cooking spray and broil) and then layered some shreaded cheese...very tasty!!
