Super fast and delicious soup. You can serve with any topping that you choose--the old staples, cheese, sour cream, tortilla chips, etc. Very healthy.

  1. Spray nonstick cooking spray in a large sauce pan add oil, heat over medium heat. Add chicken and onions, cook until chicken is no longer pink, about 3 minutes.
  2. Add broth, increase heat to high, and bring to a rapid simmer.
  3. Stir in salsa, and remaining ingredients.
  4. Bring soup back to a simmer, season with salt and pepper to taste, and serve hot.
  5. If you like it hot add some cayenne pepper now.
