Chicken Curry

This recipe uses cooked chicken. Great to use up any leftover roast chicken from last night's dinner.

  1. In a skillet, heat oil over medium heat.
  2. Add onion and cook, stirring until softened, about 3 minutes.
  3. Add flour and curry powder and cook, stirring about 1 minute.
  4. Add chicken stock, coconut milk and cook, stirring, until thickened, about 2 minutes.
  5. Add cooked chicken. Cover and simmer until chicken is heated through, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve over hot rice or warm naan bread.
