  • In a skillet, heat oil over medium heat.
  • Add onion and cook, stirring until softened, about 3 minutes.
  • Add flour and curry powder and cook, stirring about 1 minute.
  • Add chicken stock, coconut milk and cook, stirring, until thickened, about 2 minutes.
  • Add cooked chicken. Cover and simmer until chicken is heated through, about 5 minutes.
  • Season with salt and pepper to taste.
  • Serve over hot rice or warm naan bread.
