- 1 tablespoon vegetable oil
- 1 onion, diced
- 1 tablespoon all-purpose flour
- 1 tablespoon curry powder
- 1⁄2 cup chicken stock
- 1⁄2 light coconut milk
- 2 cups cooked chicken, cubed
- salt and pepper
directions
- In a skillet, heat oil over medium heat.
- Add onion and cook, stirring until softened, about 3 minutes.
- Add flour and curry powder and cook, stirring about 1 minute.
- Add chicken stock, coconut milk and cook, stirring, until thickened, about 2 minutes.
- Add cooked chicken. Cover and simmer until chicken is heated through, about 5 minutes.
- Season with salt and pepper to taste.
- Serve over hot rice or warm naan bread.
