This is my version of chicken Cordon Blue. I lightened it up a little.

Ingredients Nutrition

  1. Preheat oven to 350°.
  2. Place the broth in a microwaveable bowl at high 15 seconds.
  3. Stir in the butter and garlic.
  4. Combine the breadcrumbs, parmigiano cheese and paprika in a shallow bowl; set aside.
  5. Place the chicken on a cutting board and pound with a meat mallet to 1/4 inch thick.
  6. Sprinkle both sides of chicken with the salt, oregano and pepper.
  7. Top each breast with one slice of ham and one slice of cheese.
  8. Roll up each breast jelly-roll fashion.
  9. Dip each roll in chicken broth mixture; roll in breadcrumbs.
  10. Place rolls, seam side down in an 8-inch square pan coated with cooking spray.
  11. Pour remaining broth over the chicken.
  12. Bake at 350° for 35 minutes or tops are golden brown.

I would have given this recipe 5 plus stars if the cook time was correct. I believe it took nearly an hour or more. I kept adding between 5-10 min. until the chicken registered 170 degrees. The end result was wonderful. Moist and tasty without frying. July 09, 2010

I love Chicken Cordon Blue but have to admit..I was kinda scared to try until today..with this recipe you just can't go wrong your recipe is wonderful... can't wait to make a dish of these to take to my sister's house..she loves chicken cordon bleu even more than I do if that is possable I really think I like it better with the mozzarella & deli ham than with swiss & Canadin bacon I'll be making this again for sure..thanks for sharing
