- 1360.77 g boneless skinless chicken breasts (Perdue preferred)
- 4.92 ml salt (optional)
- 1.23 ml black pepper
- 59.14 ml olive oil
- 118.29 ml yellow onion, chopped
- 1 garlic clove, minced
- 793.78 g can no-salt-added whole tomatoes
- 226.79 g can no-salt-added tomato sauce
- 170.09 g can no-added-salt tomato paste
- 29.58 ml fresh parsley, snipped
- 2.46 ml black pepper
- 4.92 ml dried basil
- 226.79 g package angel hair pasta, cooked & drained (Ronzoni Whole Wheat pasta)
- 59.14 ml parmesan cheese, grated
directions
- Rinse chicken and pat dry; season with the 1 tsp salt and the 1/4 tsp pepper --.
- In a Dutch oven, brown chicken in oil, then remove --.
- Drain off all but 3 tbsp of the fat; add the onion and garlic, cooking until the onion is tender, stirring as it cooks --.
- Stir in chicken and all remaining ingredients EXCEPT the pasta and parmesan --.
- Cover dutch oven tightly and simmer 1 hour or until chicken is tender, stirring occasionally.
- When time is up, skim off excess fat; serve over the pasta and sprinkle with the parmesan --.
- Suggestion: Use egg noodles or fettucine instead of the angel hair.

This was very good-- I was deciding between 4 or 5 stars, and chose 5 due to the great, fresh taste and low fat/sodium. I 1/2d the recipe with no issues, and also cooked it on high for 4 hours in the crock-pot. I didn't change the liquid content, and it turned out just fine. My husband shredded his chicken and ate it, with the sauce, in a tortilla with cheddar cheese-- quite yummy. Thanks for a tasty, healthy recipe!

I too received this recipe on a sample card many years ago. My family loved this dish, but since they are grown and gone, I haven't fixed it in years. When my friend broke her wrist, I wanted something special to take to her house. My card had deteriated so I looked at RecipeZaar site and found it. Thanks so much for posting it.
