Chicken Chow Mein Casserole

"I got this recipe from a co-worker. It's one of her daughter's favorite meals. We liked the combination of chow mein noodles and cashews. It's a good week night dinner or a way to use up leftover chicken. I have also started adding a can of sliced water chestnuts."

ingredients

  • 473.18 ml diced cooked chicken
  • 59.14 ml chopped onion
  • 236.59 ml finely slivered celery
  • 14.79 ml butter
  • 304.75 g can cream of mushroom soup
  • 78.78 ml chicken broth
  • 14.79 ml soy sauce
  • 0.19 ml hot pepper sauce
  • 0.61 ml pepper
  • 236.59 ml chow mein noodles
  • 78.78 ml cashews

directions

  • Saute onion and celery in butter.
  • Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.
  • Pour into a 1 qt casserole dish and top with chow mein noodles and cashews.
  • Bake at 350 for 20 minutes.

  1. Fabulous, tasty and simple recipe! <br/>I added water chestnuts, baby corn, and the celery and onion. I also used slivered almonds in place of the cashews. (Browned in the oven first before sprinkling on top)<br/>Low Sodium Cream of Mushroom soup and Low Sodium Soy Sauce kept the salt content down somewhat.<br/>Enjoyed over frozen, leftover white rice from chinese takeout.<br/>Thank you for a 5 star dinner Alisa Lea!
     
  2. We have been eating this casserole for many years. I have made some changes to lower the sodium content. Make your own "cream soup" with the recipe for "cream of anything soup mix". You can control the sodium in the mix. Sliced water chestnuts are a nice addition and I use roasted peanuts instead of cashews (cheaper). Before I add the crispy noodles and nuts, I put aside half of the mixed ingredients to freeze for later. I put the other half in a greased bread pan, use half the noodles & nuts and bake. Perfect amount for 2 people. This recipe doesn't reheat in the microwave very well as the noodles and nuts get soggy. Works well as a OAMC recipe if you freeze before adding noodles & nuts. If you like canned mushrooms, they are also easy to drain and add to this recipe. This also works well if you want to use drained, flaked tuna instead of the chicken.
     
  3. Yummy. My aunt used to make a similar dish, and I couldn't find her recipe. The next time, I'll only use half a tbsp of soy sauce and less chicken. I also added some diced water chestnuts.

  4. Interesting! I do eat casseroles and I do cook with soup, but not very often, so I was very skeptical, but I had to try it out of curiosity and it wasn't bad. I can't say I loved it, but it was good. My one friend loved it, my other friend did not enjoy I was so so. I think adding fresh scallions water chestnuts and shitaki mushrooms helped. I was not sold of the hot sauce and would try something else next time. No seasoning is needed with the soup being salty. I did use low sodium soup and soy and still salty for me. I used the chow mein noodles and served over basmati rice. It was good, not really my thing, but my one friend really enjoyed so we all have different tastes. It is a nice way to use leftover chicken and very easy. The nuts also being toasted make a big difference<br/><br/>Will I make it again ... maybe, it was good, just not for me is all, but a nice recipe.
     
  5. I gave this 4 stars since my DD gave it a "3" and the rest of the family gave it a "5" Very easy to make and a great way to use up left over chicken. I made as directed, but added water chestnuts cause we love the crunch of them. I may have added a few extra drops of hot sauce. Thanks Alisa for sharing!
