I don't like things too spicey so I changed this up a bit. I used petite diced tomatoes and my can was 14.5 ounces. I didn't add the onion, pepper or garlic. I also used black beans instead of chili beans. My can of chicken was 12.5 ounces. I followed the rest of the recipe and we loved it. I topped it with cheddar cheese before serving.
This was a great choice for our family! It was quick, easy, and tasted awesome. The only thing I will do differently next time would be to watch which rotel I use. This time around was a tad bit too hot for my littlest. Actually, it was a bit hot for me but I suppose a little sour cream would alleviate that burn, but would definitely change the WW points value, LOL. Thanks for sharing this one with us!

Easy to make, and tasted wonderful. It will be a family favorite as soon as I tone down the heat for my daughter and grandson. I used black beans instead of chili beans, and Mexican Festival Rotel instead of regular, and still it was very spicy. I served it with cornbread, but it would also be really good over rice.
Yummy, yummy, yummy, you would not suspect this is diet food! A little spicy, but just right for a cold night, great flavor! Super easy! Served with cornbread, just to soak up the remaining "soup".
Rotel tomatoes are new to NYC and nirvana for this chilehead. Found this one and was instantly drawn by the fact that it was Core without messy modifications. I made mine with small diced chicken breasts (12 oz. raw) and otherwise followed the directions. Tons of flavor and wonderfully easy to prepare, this is sure to be a regular here as well. Thanks!
