Chicken Chili

"Plan to use @ ESC cook off Saturday, March 22, 2014. Oops, so tired on return trip from Grandson's last Varsity High School basketball game as a lettering Freshman in DePere that I "leaked" out and missed the cook off. I'll be back next year. This grandson helped me win The First Cook Off We won in Madison area.  Tried again to cook in March, 2017. Oops cancelled again! Definitely trying to do the cook off in February and going to win this cook off."

  • 10 lbs cooked chicken
  • 3 lbs italian meatballs
  • 10 hermsdorf farms onions, peeled, diced
  • 6 hermsdorf farms beaver dam bell peppers
  • 10 hermsdorf farms garlic cloves, peeled and minced
  • 2 quarts hermsdorf farms diced tomatoes, juice included
  • 3 quarts hermsdorf farms tomato sauce
  • 3 quarts chicken stock or 3 quarts water
  • 2 tablespoons cajun seasoning, # 452804
  • 2 tablespoons paprika
  • 3 tablespoons basil
  • 2 lbs black beans, soaked, drained, rinsed
  • 1 tablespoon sugar
  • 2 tablespoons salt
  • 8 quarts hermsdorf farm sweet corn
  • chopped cilantro (optional) or parsley, to garnish (optional)

directions

  • In a large pot, brown chicken & meat over medium heat until no pink remains.
  • Add; onion, garlic, sauté until onions start to brown or caramalize.
  • Add; Cajun seasoning, paprika, basil to meat.
  • Cook for 2 minutes.
  • Add; tomatoes and sauce.
