ingredients
- 10 lbs cooked chicken
- 3 lbs italian meatballs
- 10 hermsdorf farms onions, peeled, diced
- 6 hermsdorf farms beaver dam bell peppers
- 10 hermsdorf farms garlic cloves, peeled and minced
- 2 quarts hermsdorf farms diced tomatoes, juice included
- 3 quarts hermsdorf farms tomato sauce
- 3 quarts chicken stock or 3 quarts water
- 2 tablespoons cajun seasoning, # 452804
- 2 tablespoons paprika
- 3 tablespoons basil
- 2 lbs black beans, soaked, drained, rinsed
- 1 tablespoon sugar
- 2 tablespoons salt
- 8 quarts hermsdorf farm sweet corn
- chopped cilantro (optional) or parsley, to garnish (optional)
directions
- In a large pot, brown chicken & meat over medium heat until no pink remains.
- Add; onion, garlic, sauté until onions start to brown or caramalize.
- Add; Cajun seasoning, paprika, basil to meat.
- Cook for 2 minutes.
- Add; tomatoes and sauce.
