- 29.58 ml olive oil
- 236.59 ml leek, chopped (or use chopped onions)
- 3 garlic cloves, chopped
- 9.85 ml cumin, ground
- 4.92 ml cumin seed
- 453.59 g turkey sausage, ground
- 709.77 ml chicken, cooked and chopped
- 2 (907.18 g) can garbanzo beans, drained
- 157.80 ml barley
- 9.85 ml pickled jalapeno peppers
- 1419.54 ml chicken broth
- 946.36-1892.72 ml kale, chopped (optional)
- 118.29 ml monterey jack cheese, shredded, optional garnish
- chopped green onion, optional garnish
- sour cream (optional)
directions
- In a large pot heat oil over medium heat. Stir in leeks and garlic and saute for 5 minutes.
- Stir in cumin, cumin seed and sausage, cooking until sausage browns.
- Stir in chicken, beans barley, jalapeno, broth and kale and bring to a boil. Simmer for 20 minutes or until barley is cooked.
- Serve topped with cheese, green onions and sour cream if desired.
