  • Combine all ingredients mixing thoroughly.
  • Place in a casserole dish,cover with crushed potato chips and more almonds, if desired.
  • Bake at 400 for 45 minutes or until heated through.
  • Serves 8.

  1. Thanks for a great casserole recipe! I used cooked and cubed turkey breast meat instead of chicken, and I also used a box of prepared Uncle Ben's Wild Rice mix for the rice in the recipe. I also topped it with crushed ritz crackers like Smilin Jen did. It was totally delicious!! My thanks to your mom as well!!

  4. This is delicious -- the perfect casserole. The only chane I would make is possibly cutting back on the mayo a litte. Other than that, no changes needed.
     
  5. This was a great way to use up leftover roast chicken. I used brown jasmine rice which actually worked really well. The casserole had a lot of flavor. Everyone really enjoyed it, and it was eaten very quickly. This will definitely be regularly made often to use up any leftover chicken. Thanks for the wonderful recipe!

About me....well...let's see,right now I am a married, stay-at-home Mom to two beautiful children, a 10 year old daughter and a 7 year old son....they are the "lights" of my life, which I think I pretty much spent waiting for them! I feel so very lucky (and truly blessed) to be their "Mommy". I don't know that I have a fave cookbook, (and I have rarely opened one of the many I have, since finding Zaar.) I just LOVE recipes and have been "acquiring" them since I was a teenager! Actually I think I bought my first cookbook in like grade two or three, a cookie recipe book from one of those scholastic book orders!
