Very nice, Pat!! Made almost exactly to recipe, except that I made it sooner than I expected to, and didn't have any peppers. I did have zucchini, so subbed that very successfully, and I would have added baby corn if I'd had it ... but I didn't! The trick with stir-fry is always, do the prep, then the cooking takes no time at all, and you have a delicious healthy meal! Thank you, this was lovely! Made for Make My Recipe tag game.

Pretty much followed the recipe, although I did cut it in half for just the 2 of us, & then also used the 1/3 cup of cashews called for in the full recipe! Love those nuts! This stir-fry was absolutely delicious & so easy to prepare! A great keeper recipe! Thanks for sharing it! [Made & reviewed in Went to the Market recipe tag]

Lovely easy recipe Pat.
The only thing I would change is too add more sauce and maybe thicken it a little, but other than that it was lovely.
The family also enjoyed this, and the only change I made was to add brocolli and bok choy, as I have so much I am growing and need to use up. Ohhhh and I also followed your suggestion of more cashews........... which is a must!
