- 2 cups chicken, cooked and diced

Marinade
- 2 tablespoons red wine vinegar
- 1 1⁄2 teaspoons lemon juice
- 1⁄2 teaspoon sugar
- 1⁄4 teaspoon pepper
- 1⁄2 cup vegetable oil
- 1 1⁄2 teaspoons water
- 1⁄4 teaspoon basil
- 1⁄8 teaspoon garlic salt
- 1⁄8 teaspoon seasoning salt
- 1⁄8 teaspoon paprika
- 1⁄8 teaspoon dry mustard
- 1⁄8 teaspoon dried tarragon
- 1⁄8 teaspoon celery seed

- 1⁄4 cup mayonnaise
- 1 cup celery, chopped
- 1⁄2 cup cashews
- 1⁄2 cup grapes, halved
- 1⁄4 teaspoon seasoning salt
directions
- Marinate chicken overnight in marinade ingredients.
- Drain the juices off the chicken and then add mayonnaise, celery, grapes,cashews and seasoned salt.
- Mix well and refrigerate until ready to serve.

I'd give this more stars if I could it is awsome. My three year old loves it!! I am not sure how many cups of chicken I used. 4 breasts from a BJ's bag of frozen chicken ; is what I used. I doubled the marinade and salad recipie and left out tarragon, only because I didn't have any. I served this on toasted croissant rolls and it was great. I do think that I will add an extra recipie of marinade next time if I choose 2 serve it on rolls. I had some without a roll and thought it was more flavorful. I only marinated mine for 4 hours or so though so that may have been some of it. It was still the best chicken salad I've ever had and probably the only only I'll ever make again.
