I made this last night using my tagine in the oven to make 2 servings. The cinnamon amount was tripled and I used bone-in chicken thigh's. The outcome was delicious served over cumin scented Basmati rice. The addition of a green salad made this an excellent and well enjoyed meal.

  1. Saute onions, ginger, and garlic in oil in skillet. (Reserve oil), and transfer to a slow cooker.
  2. Add carrots, and potatoes.
  3. Brown chicken over medium heat in reserved oil, and transfer to slow cooker.
  4. Mix gently with vegetables.
  5. Combine seasonings in a seperate bowl, and sprinkle over chicken and vegetables.
  6. Add`raisins, and tomatoes.
  7. Cover, and cook on high for 4-6 hours.
  8. Add sliced zucchini , beans, and parsley 30 minutes before serving.
