  • Saute onions, ginger, and garlic in oil in skillet. (Reserve oil), and transfer to a slow cooker.
  • Add carrots, and potatoes.
  • Brown chicken over medium heat in reserved oil, and transfer to slow cooker.
  • Mix gently with vegetables.
  • Combine seasonings in a seperate bowl, and sprinkle over chicken and vegetables.
  • Add`raisins, and tomatoes.
  • Cover, and cook on high for 4-6 hours.
  • Add sliced zucchini , beans, and parsley 30 minutes before serving.

  1. Next time I will dice the onions and use a sweet onion as they tendtocook up more tender than the yellow. I ended up w/ long strings of tough onion. The seasoings were a perfect balance. I did 3/4 tsp of cinnamon and kept ther est as stated. This was very enjoyable as a simple and nutritious dish. If you're looking for comfort food, keep looking. We'll be enjoying this for lunch leftovers tomorrow. I also used dried garbanzo beans as I had a few on hand and a fire in the wood cookstove the day bfore im ade this. Husband added salt to his serving. I did not.
     
  2. I made this last night using my tagine in the oven to make 2 servings. The cinnamon amount was tripled and I used bone-in chicken thigh's. The outcome was delicious served over cumin scented Basmati rice. The addition of a green salad made this an excellent and well enjoyed meal.
