ingredients
- 2 tablespoons oil
- 2 large onions, sliced
- 1 teaspoon ground ginger
- 3 garlic cloves, minced
- 3 large carrots, diced
- 3 lbs skinless chicken pieces
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1⁄4 teaspoon cinnamon
- 2 tablespoons raisins
- 1 (14 1/2 ounce) can chopped tomatoes
- 3 small zucchini, sliced
- 1 (15 ounce) can garbanzo beans, drained
- 2 tablespoons chopped parsley
directions
- Saute onions, ginger, and garlic in oil in skillet. (Reserve oil), and transfer to a slow cooker.
- Add carrots, and potatoes.
- Brown chicken over medium heat in reserved oil, and transfer to slow cooker.
- Mix gently with vegetables.
- Combine seasonings in a seperate bowl, and sprinkle over chicken and vegetables.
- Add`raisins, and tomatoes.
- Cover, and cook on high for 4-6 hours.
- Add sliced zucchini , beans, and parsley 30 minutes before serving.

Next time I will dice the onions and use a sweet onion as they tendtocook up more tender than the yellow. I ended up w/ long strings of tough onion. The seasoings were a perfect balance. I did 3/4 tsp of cinnamon and kept ther est as stated. This was very enjoyable as a simple and nutritious dish. If you're looking for comfort food, keep looking. We'll be enjoying this for lunch leftovers tomorrow. I also used dried garbanzo beans as I had a few on hand and a fire in the wood cookstove the day bfore im ade this. Husband added salt to his serving. I did not.
