This is a very easy recipe, and the only healthy meal I cook so far that my junk-loving fiance will request after a long absence. I found it on the food network while searching for new ideas.

  1. Preheat oven to 350 degrees.
  2. Mix all the ingredients EXCEPT the corn chips in a large bowl.
  3. Put mixture into a casserole dish, and spread out evenly.
  4. Top with corn chips.
  5. Bake for 30-35 minutes.


Most Helpful

Pretty good and certainly easy. I think I would cut the lemon juice a little, though. Still, definitely a keeper.
