  • Preheat oven to 350 degrees.
  • Mix all the ingredients EXCEPT the corn chips in a large bowl.
  • Put mixture into a casserole dish, and spread out evenly.
  • Top with corn chips.
  • Bake for 30-35 minutes.

In March 2006 I found myself engaged. The longer I live with my intended the more I wonder if I'm marrying him...or his kitchen. I do enjoy cooking, but I'm not experienced or daring with food. I'm here to turn a would-be chore into something I can have fun with and feel good about. I have a Fanny Farmer cookbook from my mother, but a lot of the information is outdated or requires more finesse that I feel comfortable attempting right now.
