Chicken Cacciatore

"This appeared on the label of the canola oil that I always buy. Although the recipe calls for specific brands of ingredients, which I will put below, you can use any other brand. Also, since this recipe does not have any pork products or cheese in it, some one can always make this kosher by using kosher products. The recipe won't let me put this in the list of ingredients but you can also have chicken legs to the recipe. It's an and/or kind of thing."

  • Preheat the oven to 350F (180C).
  • In a plasitc bag, combine All-Purpose flour and 1/2 tsp salt.
  • Add chicken a few pieces at a time and shake to coat.
  • In a frying pan heat oil. Add chicken and brown on all sides. Remove chicken and place in 13 x 9 x 2 inch (3.5L) baking dish.
  • Combine diced tomatoes, tomato sauce, mushrooms, onion, green pepper, 3/4 tsp salt, crushe basil, crushed rosemary and garlic powder. Por over chicken.
  • Cover and bake until chicken is tender, 45 to 50 minutes. Skim off fat, if necassary.

  1. I thought this was really good. I don't think I've ever tried Chicken Cacciatore before. The flavors seemed to blend well together. I, like Andi, sauteed the onion, pepper and mushrooms until crisp tender before adding to the dish. Cooked the chicken breast for exactly 40 minutes and they were perfect. This makes a lot of sauce. Served this over wheat Angle Hair pasta. Thanks Made for SSC Pet Parade.
     
  2. Everyone enjoyed this dish. It was great served over spaghetti. I pan fried the chicken to brown it and then threw everything into a crockpot. I used both thigh meat and breast meat. The thigh meat was juicier and more flavorful in my opinion and I will just use thigh meat the next time I make this recipe.
     
  3. Wonderful Chicken Cacciatore. One of my favorite dishes when we go out to eat, this was all of that, and more. I sub'd chicken thighs, they were on sale and I also cooked in my crockpot. With the hot weather I prefered not to heat the house anymore than necessary. Cooked about 4-5 hours. Wonderful flavor.
     
  4. This is to pass out for. No wonder it was on the canola oil. Outstanding. Where to start? I used a kosher chicken, (which to me always has a real nice delicate flavor and is normally juicy) however; I know that if I hadn't used that chicken, the recipe by itself produces succulent, tender chicken. I used chicken breasts and chicken drumsticks. The only difference from the recipe, after browning the chicken, I removed the pieces and put into my baking dish. Drained fat to 1 tablespoon, and threw chopped onions, peppers, and mushrooms in pan and cooked until translucent and tender. I then added the diced tomatoes, a minced garlic clove, basil, and rest of herbs. After bubbling away for about 3 minutes added tomato sauce and cooked until warm and heated through. Gently put tomato vegetable on chicken can baked for exactly 40 minutes at 350. After cooking time, added cooked spaghetti to the bottom and put chicken and sauce on top. Delicious!! Thank you so much for posting, Studentchef! Will make lots! I owe a picture of this, as it was completely dark and completely gone except for the bones.

I am an Israeli-Canadian who grew up in Montreal Quebec. I love to cook, especially for family and friends, and I love to experiment with recipes and try to do different variations of the same recipe. I did do part of cooking school, but found the place stressful and all the good recipes high in fat and calories, even the good ones. I don't have a fave cookbook, but I eat kosher.
