Found this recipe tucked away in my stash. It came from a friend at work. You can use chicken parts or boneless skinless breast to lighten it up.

  1. In a large skillet, brown chicken in hot oil until golden brown.
  2. Add onions and garlic.
  3. Combine tomato paste, white wine, chicken broth, salt, pepper, thyme, basil and bay leaf.
  4. Pour over chicken.
  5. Cover and simmer 35 minutes, stirring occasionally.
  6. Add tomatoes, mushrooms and green pepper. Cover and continue to cook 20 minutes.
