Saucy Chicken Cacciatore

"This is one of the best chicken cacciatore recipes I've ever tried. Goes great with garlic bread, rigatoni pasta and a nice red full bodied wine. Enjoy!"

  • In a medium size pot, brown the chicken in the olive oil until browned on all sides.
  • Add the remaining ingredients except for the capers and simmer for about 1 hour.
  • Add the capers and cook slowly for an additional 10 minutes.
  • Serve over prepared pasta.

I began cooking about 5 or 6 years ago and found that I not only loved doing it, but I was amazed at the variety of meals I was preparing. From Italian to Barbecue and most everything in between. I live with my wife in the Tampa Bay area and often cook breakfasts for a group of guys in one of our beautiful parks. About the only food I haven't gotten accustomed to is liver. Can't stand it.. wife loves it.
