Chicken Burgers

  • 2 cups cooked chicken, chopped
  • 14 cup breadcrumbs
  • 14 cup onion, minced
  • 2 eggs
  • salt and pepper
  • 2 -3 tablespoons oil

directions

  • Combine first 4 ingredients (chicken - eggs) in a medium bowl and mix well. Season with salt and pepper.
  • Refrigerate until ready to use and then form into 6 patties.
  • Heat oil in a large skillet over medium high heat.
  • Add patties to pan and fry until brown, turning once.
  • Serve on hamburger buns with lettuce, mayo and tomatoes or as desired.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
