This is a family-favorite casserole! Serve it on top of rice and you have a delicious, filling meal. This is especially good for people who don't like broccoli or casseroles!
- 4 chicken breasts
- 1 1⁄2 cups broccoli florets
- 1 (10 1/2 ounce) can cream of chicken soup
- 1⁄2 cup milk
- 1⁄2 cup mayonnaise
- 1 teaspoon lemon juice
- 1 cup shredded cheddar cheese
- 1⁄2 cup breadcrumbs
- Boil or bake chicken breasts until done. Chop into bite-sized pieces. Steam or boil broccoli until cooked. To make the sauce, combine soup, milk, mayonnaise, and lemon juice in a bowl. Whisk or stir until well combined. Place chicken and broccoli into a baking or casserole dish. Pour sauce over chicken and broccoli. Cover dish with foil and bake for 30 minutes. Remove foil, sprinkle cheese and breadcrumbs over top, and bake for 15 more minutes. Serve with rice or noodles.
