I had some cheese I wanted to use up so decided to make this recipe a couple of weeks ago. Instead of flattening the chicken breasts I went the easy route and just cut them open. The other lazy thing I did was to cook the chicken in the oven only with foil on top and removed it the last ten minutes or so. I had to increase the cooking time by about 15 minutes. I like the idea of precooking the chicken and will probably do that the next time. Great rich flavors, I served it with sliced tomatoes. Will make this again, thanks for posting, Lusil.
I made my own pesto sauce from basil from my garden. I added some mozzarella cheese to the stuffing and top. My BF gives this recipe 2 thumbs up. I froze some of the left over pesto, so I know I will be making this again. I like alijen used a pesto with pine nuts and basil. I hope more people try this easy, but gourmet-like recipe. Thank you for making me look like a great chef!
Absolutely yummy! I love Boursin cheese and so as soon as I saw this recipe posted I knew it was for me. Then I realized it was from my November 2004 pick-your-chef Lusil and was so excited! I made this exactly as written, except left out the green onions. Partly because there must be a typo (1/4 what?) and partly because I don't care for them too much anyway. But, I made my own pesto just to have an excuse to play with my food processor. It tastes decadent and like I went to a lot of trouble, but as you can tell by the intructions its not difficult at all. It was a great meal and one that can be adapted to different tastes by which flavors your pesto contains. (Mine was basil and pine nut and it went well with the boursin) Thanks again Lusil!
